  • 2 large eggs

Chocolate Streusel Topping:
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup chopped nuts (optional)
Instructions:
  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
  3. In a large bowl, whisk together melted butter, chocolate chips, eggs, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
  5. Divide the batter evenly among the muffin cups.
  6. Top each muffin with a spoonful of chocolate streusel topping.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
